  1. Boil the lobsters half, pick out the meat, and cut into small bits.
  2. Season the lobster meat with mace, white pepper, nutmeg, and salt.
  3. Press the seasoned lobster meat close into a pot.
  4. Cover the lobster meat with butter.
  5. Bake for half an hour.
  6. Add the spawn.
  7. When cold, take the lobster out.
  8. With a little of the butter, put the lobster into the pots.
  9. Beat the other butter in a mortar with some of the spawn.
  10. Mix that coloured butter with as much as will be sufficient to cover the pots.
  11. Strain the mixture.
  12. Add Cayenne if approved.

Lobsters to pot. When cold, take the lobster out, and with a little of the butter put it into the pots.
