for side dish of dressed meat
for gravy

  1. Pound some beef that is raredone, with a little fat bacon or ham.
  2. Season with pepper, salt, and a little shalot or garlic.
  3. Mix them well, and make into small cakes three inches long, and half as wide and thick.
  4. Fry them a light brown, and serve them in a good thick gravy.
