  1. Prepare the cod sounds as described in the previous recipe.
  2. Stew the prepared cod sounds in seasoned white gravy.
  3. Add cream, butter, and a little bit of flour to the stew.
  4. Gently boil the mixture until it thickens.
  5. Add lemonpeel, nutmeg, and a small amount of pounded mace for flavour.

Cod sounds ragout. Prepare as above, then stew them in white gravy seasoned; cream, butter, and a little bit of flour added before you serve, gently boiling up. A bit of lemonpeel, nutmeg, and the least pounded mace, should give the flavour.
