  1. Choose a fine fat duck.
  2. Salt the duck two days before cooking.
  3. Boil the duck slowly.
  4. Prepare the onion sauce: make it very white.
  5. Melt the butter with milk instead of water for the sauce.
  6. Serve the boiled duck covered with the onion sauce.
To roast duck
  1. Stuff the duck or not.
  2. Roast the duck.
  3. Serve with gravy.
