  1. Cut them in slices, and sprinkle salt over them.
  2. Next day drain them for five or six hours.
  3. Put them into a jar, and pour boiling vinegar over them, keeping in a warm place.
  4. The slices should be thick.
  5. Repeat the boiling vinegar, and stop instantly; and so on till green.
