  1. Quarter cucumbers, and lay them in a deep dish.
  2. Sprinkle them with salt, and pour vinegar over.
  3. Fry chops of a fine brown, and put them in a stewpan.
  4. Drain the cucumbers, and put over the steaks.
  5. Add some sliced onions, pepper, and salt.
  6. Pour hot water or weak broth on them.
  7. Stew and skim well.

Steaks of Mutton, or Lamb and Cucumbers. Quarter cucumbers, and lay them in a deep dish; sprinkle them with salt, and pour vinegar over.
