Instructions (6)
  1. Half boil the sweetbreads.
  2. Stew in a white gravy.
  3. Add cream, flour, butter, nutmeg, salt, and white pepper.
  4. Alternatively, prepare them brown, seasoned.
  5. Or, after parboiling, cover with crumbs, herbs, and seasoning, and brown in a Dutch oven.
  6. Serve with butter, and mushroom catsup, or gravy.
