  1. Boil the berries and water for half an hour.
  2. Strain it through a sieve.
  3. Boil sugar with the liquor for three quarters of an hour.
  4. When cold, add yest.
  5. Let it work for a week.
  6. Put it in barrel.
  7. Let it stand for a year.
  8. To half a hogshead, add one quart of brandy and three pounds of raisins.

Elder Wine. No. 5. Half a gallon of ripe berries to a gallon of water; boil it half an hour; strain it through a sieve. To every gallon of liquor[385] put three pounds of sugar; boil them together three quarters of an hour; when cold, put some yest to it; work it a week, and put it in barrel. Let it stand a year. To half a hogshead put one quart of brandy and three pounds of raisins.
