  1. Clean the mushrooms very well, and take out the gills.
  2. Boil them tender with a little salt, and dry them with a cloth.
  3. Make a strong brine.
  4. When the brine is cold, put in the mushrooms.
  5. In about ten days or a fortnight change the brine, and put them into small bottles, pouring oil on the top.
