  1. Break one gallon of milk with runnet, and press it dry
  2. beat it in a mortar very small
  3. Put in half a pound of butter, and beat the whole over again until it is as smooth as butter
  4. Put to it six eggs, leaving out half the whites
  5. beat them very light with sack and rose-water
  6. half a nutmeg grated
  7. half a quarter of a pound of almonds beaten fine with rose-water and a little brandy
  8. Sweeten to your taste
  9. put in what currants you like
  10. make a rich crust
  11. bake in a quick oven

Cheesecake. No. 4.
