  1. Boil and beat the ground rice.
  2. Blanch and beat the sweet almonds fine.
  3. Mix the ground rice, sweet almonds, eggs, sugar, and butter well together.
  4. Make a puff paste as thin as possible.
  5. Line some cups with the puff paste.
  6. Bake the puddings.
  7. Turn the puddings out of the cups.
  8. Pour wine sauce over them.

Pottinger’s Pudding. Three ounces of ground rice, and two ounces of sweet almonds, blanched and beaten fine; the rice must be boiled and beaten likewise. Mix them well together, with two eggs, sugar and butter, to your taste. Make as thin a puff paste as possible, and put it round some cups; when baked, turn them out, and pour wine sauce over them. This quantity will make four puddings.
