  1. Cut two large china oranges in quarters, and take out the seeds.
  2. Beat them in a mortar, with two ounces of sugar, and the same quantity of butter.
  3. Add four eggs, well beat, and a little Seville orange-juice.
  4. Line the dish with puff paste, and bake it.
