To roast a HAM or a GAMMON of BACON.
HALF boil your ham or gammon, then take
off the skin, dredge it with oatmeal sifted very
fine, baste it with fresh butter, it will make a
stronger froth than either flour or bread crumbs,
then roast it; when it is enough dish it up, and
pour brown gravy on your dish: garnish with
green parsley, and send it to the table.
