  1. Take your goose ready dressed, singe it, and pour over it a quart of boiling milk.
  2. Let it lie in it all night, then take it out and dry it exceeding well with a cloth.
  3. Season it with pepper and salt.
  4. Chop small a large onion and a handful of sage leaves.
  5. Put the onion and sage leaves into your goose.
  6. Sew up the goose at the neck and vent.
  7. Hang it up by the legs till the next day.
  8. Put it into a pan of cold water, cover it close, and let it boil slowly one hour.

To boil a GOOSE with ONION SAUCE. TAKE your goose ready dressed, singe it, and pour over it a quart of boiling milk, let it lie in it all night, then take it out and dry it exceeding well with a cloth, season it with pepper and salt, chop small a large onion, a handful of sage leaves, put them into your goose, sew it up at the neck and vent, hang it up by the legs till the next day, then put it into a pan of cold water, cover it close, and let it boil slowly one hour.
