  1. Stone a pound and a half of cherries.
  2. Put them in a preserving-pan, with a little water.
  3. When they are scalding hot put them in a sieve, or on a cloth to dry.
  4. Then put them in your pan again.
  5. Beat and sift half a pound of double refined sugar, strew it betwixt every lay of cherries.
  6. When it is melted set them on the fire, and make them scalding hot.
  7. Let them stand till they are cold.
  8. Do so twice more.
  9. Then drain them from the syrup, and lay them separately to dry.
  10. Dip them in cold water, and dry them with a cloth.
  11. Set them in the hot sun to dry as before, and keep them in a dry place till you want to use them.

A second Way to dry CHERRIES.
