To dress a STURGEON.
TAKE what size of a piece of sturgeon you
think proper, and wash it clean, lay it all night
in salt and water, the next morning take it out,
rub it well with allegar, and let it lie in it for two
hours, then have ready a fish-kettle full of boil-
ing water, with one ounce of bay salt, two large
onions, and a few sprigs of sweet marjoram;
boil your sturgeon till the bones will leave the
fish,
