  1. To ten gallons of water add twenty-four pounds of lump sugar.
  2. Beat the whites of six eggs very well, and mix them when the water is cold.
  3. Boil it an hour, scum it very well.
  4. Pare four dozen of the roughest and largest Seville oranges very thin, and put them into a tub.
  5. Pour the liquor on the oranges when boiling hot.
  6. When you think it is cold enough add to it three or four spoonfuls of new yeast, with the juice of the oranges, and half an ounce of cochineal beat fine, and boiled in a pint of water.
  7. Stir it all together, and let it work four days.
  8. Then put it in the casks, and in six weeks time bottle it for use.
