  1. Skin and wash your eels very clean.
  2. Cut them in pieces one inch and a half long.
  3. Season them with pepper, salt, and a little dried sage rubbed small.
  4. Raise your pies about the size of the inside of a plate.
  5. Fill your pies with eels.
  6. Lay a lid over them.
  7. Bake them in a quick oven.
  8. They require to be well baked.
