PULL your cauliflowers in bunches as before, and give them just a scald in salt and water, spread them on a cloth, and sprinkle a little salt over them, and throw another cloth upon them till they are drained, then lay them on sieves, and dry them in the sun till they are quite dry like scraps of leather, put them into jars about half full, and pour hot vinegar (with spice boiled in it to your taste) upon them; tie them down with a bladder, and a leather, quite close.—N.
