  1. Scale, gut, and wash your herrings.
  2. Dry them clean and rub them over with a little vinegar and salt.
  3. Skewer them with their tails in their mouths.
  4. Lay them on your fish-plate.
  5. When your water boils put them in.
  6. They will take ten or twelve minutes boiling.
  7. When you take them up, drain them over the water.
  8. Then turn the heads into the middle of your dish, lay round them scraped horse-radish, parsley and butter for sauce.

To boil HERRINGS. SCALE, gut, and wash your herrings, dry them clean and rub them over with a little vinegar and salt, skewer them with their tails in their mouths, lay them on your fish-plate, when your water boils put them in, they will take ten or twelve minutes boiling; when you take them up, drain them over the water, then turn the heads into the middle of your dish, lay round them scraped horse-radish, parsley and butter for sauce.
