  2. Pick out the leaves and dead stalks.
  3. Put them into jars, with a large quantity of strong salt and water.
  4. Tie them down with a bladder.
  5. When you see your barberies scum over put them into fresh salt and water.
  6. They need no vinegar, their own sharpness is sufficient enough to keep them.
