  1. Pare and stone the apricots.
  2. Boil the apricots in water until they mash quite small.
  3. Put a pound of double refined sugar in your preserving-pan with as much water as will dissolve it.
  4. Boil the sugar and water until it returns to sugar.
  5. Take the preserving-pan off the stove.
  6. Add a pound of apricots to the sugar mixture.
  7. Let it stand until the sugar is melted.
  8. Make the mixture scalding hot, but do not let it boil.
  9. Pour the mixture into china dishes or cups.
  10. Set the dishes or cups in a stove.
  11. When the apricot paste is stiff enough to turn out, put them on glass plates.
  12. Turn the apricot paste as you see occasion until they are dry.

To make APRICOT PASTE. PARE and stone your apricots, boil them in water till they will mash quite small, put a pound of double refined sugar in your preserving-pan, with as much water as will dissolve it, and boil it to sugar again, take it off the stove, and put in a pound of apricots, let it stand till the sugar is melted, then make it scalding hot, but do not let it boil, pour it into china dishes, or cups, set them in a stove, when they are stiff enough to turn out put them on glass plates, turn them as you see occasion till they are dry.
