  1. Clean your herrings.
  2. Lay them on a board.
  3. Mix black and Jamaica pepper, a few cloves, and a good deal of salt together.
  4. Rub the mixture all over the fish.
  5. Lay the herrings straight in a pot.
  6. Cover them with allegar.
  7. Tie a strong paper over the pot.
  8. Bake them in a moderate oven.
  9. If your allegar be good, they will keep two or three months.
  10. You may eat them either hot or cold.

To bake HERRINGS. WHEN you have cleaned your herrings as above, lay them on a board, take a little black and Jamaica pepper, a few cloves, and a good deal of salt, mix them together, then rub it all over the fish, lay them straight in a pot, cover them with allegar, tie a strong paper over the pot, and bake them in a moderate oven; if your allegar be good, they will keep two or three months; you may eat them either hot or cold.
