  1. Shell your peas.
  2. Boil them in hard water with salt in it.
  3. Drain them in a sieve.
  4. Cut your lettuces in slices.
  5. Fry the lettuces in fresh butter.
  6. Put your peas and lettuces into a tossing-pan.
  7. Add a little good gravy, pepper, and salt.
  8. Thicken it with flour and butter.
  9. Put in a little shred mint.
  10. Serve it up in a soup dish.

To stew PEAS with LETTUCES. SHELL your peas, boil them in hard water with ſalt in it, drain them in a ſieve, then cut your lettuces in ſlices, and fry them in freſh but- ter, put your peas and lettuces into a toſſing- pan, with a little good gravy, pepper, and ſalt, thicken it with flour and butter, put in a little ſhred mint, and ſerve it up in a ſoup diſh.
