  1. Take the closest and whitest cauliflowers you can get, and pull them in bunches.
  2. Spread them on an earthen dish, and lay salt all over them.
  3. Let them stand for three days to bring out all the water.
  4. Put them in earthen jars, and pour boiling salt and water upon them.
  5. Let them stand all night.
  6. Drain them on a hair sieve.
  7. Put them into glass jars.
  8. Fill up your jars with distilled vinegar, and tie them close down with leather.
