  1. Take green walnut gooseberries when they are full grown, and take out the seeds.
  2. Put them in cold water.
  3. Cover them close with vine leaves, and set them over a slow fire.
  4. When they are hot take them off, and let them stand.
  5. When they are cold set them on again till they are pretty green.
  6. Put them on a sieve to drain.
  7. Have ready a syrup made of a pound of double refined sugar, and half a pint of spring water.
  8. The syrup is to be cold when the gooseberries are put in.
  9. Boil them till they are clear.
  10. Let them by for a day or two.
  11. Give them two or three scalds.
  12. Put them into pots or glasses for use.

To preserve Gooseberries green.
