  1. Put three sweet-breads in boiling water for five minutes.
  2. Beat the yolk of an egg a little, and rub it over them with a feather.
  3. Strew on bread crumbs, lemon peel, and parsley shredded very fine, nutmeg, salt, and pepper to your palate.
  4. Set them before the fire to brown.
  5. Add to them a little veal gravy, mushroom powder, caper liquor, or juice of lemon and browning.
  6. Thicken it with flour and butter.
  7. Boil it a little.
  8. Pour it in your dish.
  9. Lay in your sweet-breads.
