Snow Cream
Put a pint of cold water into a basin or stewpan with a quarter-pint of double cream, the strained juice of a
lemon, and two ounces of castor sugar; whip this mixture quickly with a whisk until the top is frothy like snow, remove the froth with a slice, and place it in a hair sieve to drain. Repeat the whipping while any froth is obtainable, then when ready to serve take it gently from the sieve with a slice or spoon, and use.
