  1. Put into a stewpan two pounds of good cooking apples that have been peeled and finely sliced, the finely-chopped peel of one lemon, a split pod of vanilla, as much ground ginger as will cover a threepenny piece, one and a half pints of water, four ounces of Marshall's Cane Sugar, and a half pint of rose water.
  2. Boil to a pulp.
  3. Add enough of Marshall's Apple Green to make it the colour of cucumber peel.
  4. Rub the whole through a tammy cloth.
  5. When cool put it into the charged freezer and freeze it.
