  1. Put 1/2 pt. of milk and 2 ozs. of butter on the fire.
  2. When it boils, add 1/2 pt. of flour, and stir it till it comes off the sides of the pan.
  3. Let it cool; add 4 eggs and a little sugar, and beat till it is quite smooth.
  4. Flour a baking tin, and put teaspoonfuls of this mixture on the tin, leaving a little space between each (for each teaspoonful is a pudding).
  5. Glaze the tops with egg and sugar flavoured with vanilla.
  6. The oven must not be too hot.
  7. They should rise quite high in the oven.
  8. Serve with fruit juice, or custard, or cream flavoured with coffee.
