To Keep Mutton, &c., in very hot weather. (Mr. Justice Coltman, Birk Hall. 1855.) The sheep when killed should have the liver taken out at once; the kidney must be left in till next day, till meat is quite cold, or it will break the suet, but if left above 24 hours it will spoil the mutton.
