Carrots. No. 11. Young Carrots. (Isa. Emslie. 1891.) Pop the carrots into boiling water with ½ oz. butter and a pinch of salt; cover with lid, boil 1 hour; drain and simmer without lid 1 hour in second stock; stir, and watch; drain.
