To keep Tongues. (E. Hager, Lamb's Conduit Street.)
Boil together over a gentle fire for 20 minutes, 6 lbs. common salt, 2 lbs. of sugar or treacle, 3 ozs. saltpetre, 3½ gallons of spring water.
Skim it carefully whilst it is boiling, and when quite cold pour it over the tongues, which must be covered with the brine.
