  1. Boil together over a gentle fire for 20 minutes, 6 lbs. common salt, 2 lbs. of sugar or treacle, 3 ozs. saltpetre, 31/2 gallons of spring water.
  2. Skim it carefully whilst it is boiling, and when quite cold pour it over the tongues, which must be covered with the brine.

To keep Tongues. (E. Hager, Lamb's Conduit Street.) Boil together over a gentle fire for 20 minutes, 6 lbs. common salt, 2 lbs. of sugar or treacle, 3 ozs. saltpetre, 3½ gallons of spring water.
