  1. Boil 1/2 oz. of hops 2 minutes in 3 qts. of water.
  2. Strain the liquor while it is quite boiling, over 11/2 lbs. of flour, 4 spoonfuls of sugar, and 4 spoonfuls of salt.
  3. When lukewarm, add about 1 lb. of brewer's yeast and let it stand till next day.
  4. Bottle it.

Home-made Yeast. No. 2. (Lady James Murray.) Boil ½ oz. of hops 2 minutes in 3 qts. of water, strain the liquor while it is quite boiling, over 1½ lbs. of flour, 4 spoonfuls of sugar, and 4 spoonfuls of salt. When lukewarm, add about 1 lb. of brewer's yeast and let it stand till next day, then bottle it. 1 oz. of this yeast will do to start the next making, 1 lb. of brewer's yeast being wanted to start with originally.
