  1. Mash the strawberries with sufficient sugar to sweeten and set them aside for about an hour.
  2. Boil the water and two ounces of sugar for twenty minutes.
  3. Add the gelatine which has been soaked for an hour in a little cold water.
  4. Remove from the fire and strain.
  5. Put the strawberries through a fine sieve.
  6. Add the syrup gradually, beating hard for five minutes.
  7. Beat the whites to a stiff froth.
  8. Add them to the strawberries and beat till the mixture begins to set.
  9. Put into a wet mould.
  10. Serve with whipped cream.
