  1. Wash and clean fix or eight heads of celery.
  2. Cut them about three inches long.
  3. Boil them tender.
  4. Pour away all the water.
  5. Take the yolks of four eggs beat fine.
  6. Add half a pint of cream, a little salt and nutmeg.
  7. Pour the egg mixture over the celery.
  8. Keep the pan shaking all the while.
  9. When it begins to be thick, dish it up.
