  1. Cut the salmon into little pieces, such as will lay rolled in half-sheets of paper.
  2. Season it with pepper, salt and nutmeg.
  3. Butter the inside of the paper well.
  4. Fold the paper so as nothing can come out.
  5. Lay them on in a plate to be baked.
  6. Pour a little melted butter over the papers.
  7. Cover with crumbs of bread all over.
