  1. Wash the fish very clean.
  2. Dry it well and flour it.
  3. Take some of the beef-dripping and make it boil in the stew-pan.
  4. Throw in your fish and fry it until it is a fine light brown.
  5. Lay it on the bottom of a sieve, or coarse cloth to drain.
  6. Make sauce according to your fancy.

As to frying fish, first wash it very clean, then dry it well and flour it; take some of the beef-dripping, make it boil in the stew-pan, then throw in your fish, and try it of a fine light brown. Lay it on the bottom of a sieve, or coarse cloth to drain, and make sauce according to your fancy.
