  1. Wash the mushrooms with a bit of flannel through two or three waters.
  2. Set mushrooms on the fire in a stew-pan with spring-water and a small handful of salt.
  3. When it boils, pour your mushrooms in.
  4. Let it boil three or four minutes.
  5. Throw them into a cullender.
  6. Lay them on a clean cloth quick, and cover them with another.

To pickle muſhrooms White. TAKE small buttons, cut and prime them at the bottom, wash them with a bit of flannel through two or three waters, then set set on the fire in a stew-pan spring-water, and a small handful of salt; when it boils, pour your mushrooms in. Let it boil three or four minutes; then throw them into a cullender, lay them on a clean cloth quick, and cover them with another.
