  1. Take your angelica in April, boil it in water till it is tender.
  2. Take it up and drain it from the water very well.
  3. Scrape the outside of it, and dry it in a clean cloth.
  4. Lay it in the syrup and let it lie for three or four days, and cover it close.
  5. The syrup must be strong of sugar, and keep it in a good while, and let it not boil.
  6. After it is heated a good while, lay it upon a pye plate, and so let it dry.
  7. Keep it near the fire left it dissolve.

To Candy Angelica. TAKE your angelica in April, boil it in water till it is tender: then take it up and drain it from the water very well, then scrape the outside of it, and dry it in a clean cloth, and lay it in the syrup, and let it lie in three or four days, and cover it close; the syrup must be strong of sugar, and keep it in a good while, and let it not boil; after it is heated a good while, lay it upon a pye plate, and so let it dry, keep it near the fire left it dissolve.
