  1. Boil the vegetables in a great deal of water until they are soft.
  2. Test for softness by running a fork into them.
  3. Take them up and carefully scrape all the dirt off them.
  4. Scrape them all fine with a knife, throwing away all the sticky parts.
  5. Put them into a sauce-pan with some milk and stir over the fire until they are thick.
  6. Take care they don't burn.
  7. Add a good piece of butter and a little salt.
  8. When the butter is melted send them to table.

THEY should be boiled in a great deal of water, and when you find they are soft (which you will know by running a fork into them) take them up, and carefully scrape all the dirt off them; and then with a knife scrape them all fine, throwing away all the sticky parts; then put them into a sauce-pan with some milk, and stir them over the fire till they are thick. Take care they don't burn, and add a good piece of butter, and a little salt, and when the butter is melted send them to table.
