  1. Make a syrup of the sugar with about a pint of fair water.
  2. Prick the damsins.
  3. Stir the damsins into the hot syrup.
  4. Let them stand on little fire, to keep them warm for half an hour.
  5. Put all into a basin and cover them.
  6. Let them stand till the next day.
  7. Put the syrup from them and set it on the fire.
  8. When the syrup is very hot, put it on the damsins.
  9. Repeat this process twice a day for three days together.
  10. Draw the syrup from the damsins and lay them in an earthen dish.
  11. Set them in an oven after bread is drawn.
  12. When the oven is cold, take them and turn them.
  13. Lay them upon clean dishes.
  14. Set them in the sun, or in any other oven, till they are dry.

To dry Damſins. PROVIDE four pounds of damſins; take one pound of fine ſugar, make a ſyrup of it, with about a pint of fair water; then prick your damſins, ſtir it into your hot ſyrup, to let them ſtand on little fire, to keep them warm for half an hour; then put all into a baſon, and cover them, let them ſtand till the next day; then put the ſyrup from them, and ſet it on the fire, and when it is very hot, put it on your damſins: this do twice a day for three days together; then draw the ſyrup from the damſins, and lay them in an earthen diſh, and ſet them in an oven after bread is drawn; when the oven is cold, take them and turn them, and lay them upon clean diſhes; ſet them in the ſun, or in any other oven, till they are dry.
