Grilled Herrings. Mustard Sauce. (Harengs grillés. Sauce Moutarde.) Clean the herrings and cut slits in the sides from the back to the roe about a quarter of an inch apart, season with oil, pepper, and salt, grill or broil for about ten to fifteen minutes, dish with mustard sauce round, or in a sauceboat if the number of guests is large.
