  1. Take a gallon of spring water, put it into a saucepan over the fire, and throw in a handful of salt.
  2. Boil it up several times, and keep it clean scummed.
  3. When it is well cleared from the scum, take a middling sized cod, as fresh as possible, and put it into some fresh pump-water.
  4. Let it lie a few minutes, and then cut it into slices about two inches thick.
