  1. Wash the barley, and soak it in cold water for 2 hours.
  2. Drain it, and put it into a saucepan with the milk.
  3. Simmer gently until the barley is tender, and the milk is thick.
  4. Stir in the sugar, butter, salt, and nutmeg.
  5. When the mixture is cool, beat in the eggs.
  6. Pour into a buttered dish, and bake in a moderate oven until set.
