Chars. AFTER having cleaned your fiſh, cut off the fins, tails, and heads, and then lay them in rows in a long baking-pan, having firſt ſeaſoned them with pepper, ſalt, and mace. Send them to the oven, and when they are done, let them ſtand till they are cold, then lay them in your pots, and cover them with clarified butter. This fiſh is greatly admired, and is peculiar to the lakes in Weſtmorland.
