  1. Take the whitest and closest cauliflowers you can get, break the flowers into bunches, and spread them on an earthen dish.
  2. Lay salt all over them, and let them stand for three days to draw out all the water.
  3. Then put them into jars, and pour boiling salt and water upon them.
  4. Let them stand all night, then drain them in a hair sieve, and put them into glass jars.
  5. Fill up your jars with distilled vinegar, and tie them close down.

Cauliflowers. TAKE the whitest and closest cauliflowers you can get, break the flowers into bunches, and spread them on an earthen dish.
