HAVING made a puff-paste, roll it near half an inch
thick, and fill the crust with apples pared and cored.—
Grate in a little lemon-peel, and, in the winter, a little
lemon-juice (as it quickens the apples) put in some sugar,
close the crust, and tie it in a cloth. A small pudding
will take two hours boiling, and a large one three or
four.
