  1. Having made a puff-paste, roll it near half an inch thick.
  2. Fill the crust with apples pared and cored.
  3. Grate in a little lemon-peel.
  4. In the winter, add a little lemon-juice (as it quickens the apples).
  5. Put in some sugar.
  6. Close the crust and tie it in a cloth.
  7. A small pudding will take two hours boiling, and a large one three or four.
