  1. Cut the sweetbreads into long slices.
  2. Beat up the yolk of an egg and rub it over the sweetbread slices with a feather.
  3. Make a seasoning of pepper, salt, and grated bread.
  4. Strew the seasoning over the sweetbread slices.
  5. Fry the sweetbread slices in butter.
  6. Serve the sweetbreads with melted butter and catchup.
  7. Garnish with crisped parsley and very small thin slices of toasted bacon.

Sweetbreads. CUT them into long slices, beat up the yolk of an egg, and rub it over them with a feather. Make a seasoning of pepper, salt, and grated bread, strew this over them, and fry them in butter. Serve them up with melted butter and catchup, and garnish with crisped parsley, and very small thin slices of toasted bacon.
