  1. Make a good crust with flour and suet shred fine, and mix it up with cold water; season it with a little salt, and make it pretty stiff.
  2. Take either beef or mutton steaks, well season them with pepper and salt, and make it up as you would an apple pudding; tie it in a cloth, and put it in when the water boils.
  3. If a small pudding, it will take three hours; if a large one five hours.
